The server side applications usually take requests from client applications/applets and process them on a server. Often, results are passed to back to the client programs.
Simply, the server side apps are multi-threaded programs to handle multiple requests at once over specified ports.
If you are familiar with FTP, HTTP, and telnet daemons, you probably won't have that much problem understanding what Java Server Apps are.
